Meal Prep Monday: Protein Boxes

Happy Monday! I hope you all had a lovely weekend, hopefully soaking up this beautiful fall weather that has breezed in. After an over-indulgent weekend in Atlanta, (fries, pizza, wine, biscuits, etc), I'm excited to get back on track with healthy eating today. I don't have a microwave at work so I'm trying to find healthy options that can be eaten chilled. I like the little protein boxes they have at Starbucks but they have cheese and I'm trying to reduce my dairy intake during the week. These 4 Ingredient protein boxes can be put together in a breeze!

4 Ingredient, 15 Minute Protein Lunch Boxes

Makes (1) Box, double or triple your ingredients to make several at one time.


  • 2 hardboiled eggs
  • 1/4 cup of almonds
  • 1 cup of oven roasted okra (or veggie of choice)
  • 1 cup of grapes (or fruit of choice)


Pre-heat oven to 425. Add whole eggs to a pot of water and bring to a boil. Meanwhile, toss fresh okra with a tbsp of oil and salt. Add to baking sheet and bake for 10-15 minutes until soft and browned. Once eggs reach a boil, remove from heat and cover. Let sit for 10 minutes. Then drain and add water and ice to the pan. Crack shells and peel the eggs. The above method is the best way to remove the shell quickly.

Assemble your boxes: Eggs, Almonds, Grapes & Okra. Refrigerate and consume within 5 days. Voila! You are ready for the week.

These are a perfect mix of carbs, fat and protein- very satisfying and versatile.
